High-mountain gastronomy is defined by products such as mushrooms, river trout and cured meats —donja, bringuera, bull or bisbe— as well as cocas, escudella, game stews and trinxat: some of the country's most traditional recipes.
Historically, bordas were high-mountain houses used to shelter livestock and store pasture. Today, around twenty restored bordas operate as restaurants serving traditional Andorran cuisine, with wood fire, stone and local produce.
